There may be as many recipes for paella as there are Spaniards but there are a few things that just about everybody agrees on.

Sadly, few people outside of the Mediteranean have ever experienced an authentic Paella. They might have seen or tried something called Paella, but the truth is, much of the time, these dishes are a pale imitation.

If your lucky enough to live in QLD, you might have seen the giant paella cooked by 'Senor Paella.' So it is possible to get the real thing in Australia. Have a look at the clip on the right to get a taste or follow the links on our links page.

True Paella is cooked in an open, wide pan. The rice is not steamed, pre-cooked or covered and placed in an oven. The main ingredients are not cooked seperately and then arranged on top as a garnish.

Paella can be extravagent and luxurious or simple and stylish but it will always be a spectacle.
